Quinoa Veggie Stir Fry

I made a yummy and healthy dinner tonight and I thought I would share! 

One of my favorite foods (especially since I don't like to eat much meat) is quinoa. It is a grain that is a complete protein source (meaning it contains an adequate proportion of all nine of the essential amino acids necessary for the dietary needs of humans and other animals).  So anyway, I have been experimenting with different tasty recipes that include it.

I get the organic quinoa from my favorite store - Trader Joe's!
It is super simple to cook, just like rice, and takes 15 minutes.

I decided to take some veggies I had on hand - carrots, zucchini and red pepper.  Stir fried them with olive oil, salt, pepper, oregano, sesame seeds.  




Once the quinoa was done, I splashed in a few tablespoons of herb & garlic marinade just to give it a little more flavor. 


Then to serve, just spoon veggies over quinoa and done. It turned out so tasty! As with all of my "recipes" I just use what I have on hand, with no specific measurements. And there are so many variations!

Takin' Care of Business

Nothing all too exciting going on this week for us yet.  Yesterday Dustin and I had to go sign a bunch of papers for our house, so my mom watched Leah for a few hours (I will be SO bummed when my mom goes back to work and isn't around all the time to hang out with us and help with Leah!).  And after our business was done we went to lunch at Whole Foods. YUM, I love their salad & hot food bar! 

Today my poor mom had to get one of her wisdom teeth pulled so Leah, Neil and I went to be with her.  Leah did so good waiting for the almost 2 hours we were there. She played on the chairs, ate snacks, and watched a few Elmo videos on Uncle Neil's phone.



Luckily there was a park across the street that I took her to for a little bit when she started to get antsy.


I think the weather is supposed to be nice the rest of the week and into the weekend so I need to get some fun stuff on the calendar!

New Booster Seat

We have been wanting to get Leah a booster seat for awhile now.  I was shopping at Target yesterday and saw this on clearance!
I am not one to usually get Leah overly girly, all pink and purple princess stuff, etc. But for $20, this was too cute!  I couldn't resist! 
 And Leah LOVES it!

Awww loves for baby  :)


I still haven't fed her a meal in this, she is so far just having a blast playing in it, haha!

Fun Friday After a Long Week

This has seemed like the longest week!  We have been on the go all day every day and our schedule has been all over the place. And Leah thrives on her schedule, so she has been a little wacky all week because of it. AND, I like MY time while Leah is usually napping to get things done. Luckily she has been able to nap and eat at my mom's house a few days which has helped us soooo much. Thanks Mom! :-)  But I will be happy to get back to our regular schedule next week!

Today we went to the beach with Sheri and Ashlyn and the girls had fun playing in the sand and wading in the lake.










I hope the weather stays nice for at least the next few weeks since I feel like it JUST started being nice!!

Long Beach
