Pumpkin Patch Then and Now

We went to the pumpkin patch today and had so much fun! More pics to come but for now, I wanted to do a couple then and now pics since we went to this same farm last year!

Kristin's Lasagna

OK so this is my recipe for lasagna as a person who does not like red meat or cheese :-)  BUT I think it ends up being lighter and healthier than traditional recipes, so that's a plus :-)  And tastes just as good in my opinion! 

I don't know what has gotten into me since we moved to our new house (domestic bliss?) but I am wanting to cook more and try new recipes! I EVEN joined Pinterest to find new ones!

As with all my recipes, no measuring needed, just do to your liking.

You need -
Lasagna noodles (I used Trader Joe's no boil noodles which are A-mazing and make it that much easier!)
Cooked chicken breast, chopped
Tomato sauce
Chopped white onion
Garlic
Italian seasoning
Parmesan cheese
Bread crumbs (optional)

All I did was saute the onion and garlic in olive oil, then add the tomato sauce, Italian seasoning and chicken and simmer for a few minutes.
In your baking dish, first put a light layer of sauce, then noodles, sauce mixture, cheese, noodles, sauce mixture, cheese, etc. until your dish is full. End with cheese and then I also added bread crumbs to make the top more crunchy.
Bake at 350 for 35 minutes.


In the future I may do a vegetarian version and add maybe roasted or sauteed veggies in place of the chicken.

It turned out so yummy, I might even be able to serve this to company!  ;-)

This and That

Our kitty Tiger seems to be doing a little better, thanks for all of the well wishes.  Yesterday he started eating a little bit and today he has been walking around a little more. The medicine must be working. Let's hope that this is the start of a healthy recovery!

Yesterday Leah and I got in the Halloween spirit and did some fun stuff! 
First we decorated the windows!


 Then Leah ate dinner on her fun Halloween plate

This morning I watched my cousin's little boy Dallas. Wow keeping up with two one year olds is hard work!  But Leah and Dallas had a lot of fun together!





It is a little sunny out today so when Leah wakes up from her nap we are heading outside to play!

My Smart Girl

This post is mostly for our memory so sorry if it bores a lot of you. ;-)

At a week over 20 months old, Leah is really starting to talk A LOT more and repeats everything!

She is saying at least 3 words in a row now including -

I don't know.
Let's go home!
Noooo night night mama!
Yay-Yay (Leah) happy baby 

She loves singing songs and her favorites are -
Row Row Row the Boat
The Wheels on the Bus (current obsession!) - We will start to sing it saying "The kids on the bus say ----" and see if she can finish and she will say "Yay yay yay"

She will also just be playing on her own singing sometimes it's so cute.  I need to get my Flip video out to catch her in action soon!

She loves to point out everything she knows. She will get silly and really fast point to things and say "Mama!", "Elmo!", "Phone!", "Slide!", "Puppy!", etc. It is so funny.  She is also always saying "Hi" to everything. Hi Elmo, Hi Leilah, Hi Daddy, etc. 

She still loves her books and loves to sit in on her pillow pet in her room and flip through them.  And we still read books before nap and bedtime, and Leah wants to pick which ones we read. She is starting to memorize the pages too and will know what is going to be on that page and says something from it before I read it!
Something funny - a week ago she pinched her hand in the door and I put a Hello Kitty bandaid on it. First time I have had to put one on her.  And she left it on for quite awhile! Last night my mom brought her a pair of Hello Kitty socks. She picked one up, put it on her hand and said, "Owwww". She remembered that Hello Kitty was on her bandaid!!  It was so smart of her!

She has an amazing memory for her age!  We went to the zoo a few times this summer with different people. We have several zoo books that she loves to read and every time we do, she names the people that went to the zoo with us! 

Leah is such a smart girl and we are so proud!  Every day she surprises and impresses us with something new that she has learned!  :-)

When it Rains it Pours

Literally. Today it has been pouring down rain all day long.  Dark and dreary fall day.

To go along with the weather, a few sad things have happened over the last few days. Just a warning, this is a depressing post, read at your own risk.

Our kitty Tiger was not snapping out of his anxiety from the move, so I finally broke down and took him to the vet today.  He has been hiding for the last 2 weeks, hasn't eaten anything so lost 5 lbs, and has been having accidents in his hiding spots. For the last week we have been giving him water with a syringe and even tried buying a cat pheromone spray to help ease his stress.  So anyway, first thing the vet notices is that he is severely anemic.  His lethargic condition has mostly to do with that then stress.  And obviously lack of nutrients from not eating.  There are several things that could be causing the anemia with the most likely cause being leukemia.  :(  The only way to know for sure would be to run several blood tests costing several hundred dollars, and the results could be inconclusive or prove that he has a life threatening disease in which treatment could be thousands of dollars.  Instead of all the testing, we decided to put him on a dose of prednisone and antibiotics to get the anemia under control and see if it makes him better and increases his appetite. ANYWAY this is really sad news.  I will keep you all updated on any progress.

Also, Dustin's aunt (my mother in law's sister) passed away suddenly yesterday.  Please keep his family in your thoughts and prayers, especially Dustin's grandmother who is having to deal with what I can only imagine would be the hardest thing in the world - the loss of a child. 

So anyway, again sorry this is such a sad post.  Amidst all of the fun and exciting things going on for us right now, because of these few things I am feeling down.  :(
