I saw the best idea ever for making chicken pot pie filling and then pouring over biscuits instead of into a pie crust. I can't remember which blog this was, so if it was yours, let me know so I can give you credit! But I decided to make my own filling and in my beloved crock pot of course:-)
Chicken pot pie filling - As with all of my recipes, measurements aren't exact!
*6-8 chicken breast tenderloins
*2 cans condensed cream of chicken soup
*1 cup of milk
*A few cups of your choice mixed veggies * I used frozen peas, carrots, green beans, corn *
*Magical ingredient that makes this taste amazing - *rosemary!*
Biscuits * I used the low fat kind and they tasted just as good to me! *
Salt & Pepper
Spray crock pot with cooking spray for easier clean up!!
Place chicken and veggies into pot
Whisk together soup and milk and add rosemary, salt, pepper
Pour mixture over chicken and veggies
Cook on low for ~8 hours. Mine turned out the perfect consistency but add milk to thin out, or corn starch to thicken.
Take chicken out, cut into small pieces, then mix back in.
Bake biscuits according to directions.
Then split a biscuit and ladle filling over top!
Then get approval from your family -
YUM, YUM, YUM

Weekend
This was such a great weekend. Since we moved I feel like we haven't had much quality family time. Specifically me and Dustin. Friday night Dustin went to have our renters sign the lease and gave them the keys and all that. He has just been so stressed over finding renters and now that we have he is able to relax a little more. He was so pumped that he brought home a bottle of prosecco for us to celebrate!
Saturday Leah went over to my mom's house while we made yet another trip to IKEA and Target. Leah is getting so hard to take on any sort of shopping trips (especially when I am by myself!) so it was nice to be able to concentrate and get some things done. Saturday night my mother in law came over to play with Leah and put her to sleep while we went out for a date night! We saw In Time and I thought it was really good. Interesting concept about time as money. Then we went to Lucky Strike to have a drink and play some games. My mother in law actually spent the night in our guest room and got up with Leah in the morning too which was sooooo nice of her! I didn't take any pics from our date night, except for some we got from going in the photo booth! Haven't done that in like 10 years! I wish our scanner wasn't broken so I could share it!
Sunday we got a chance to finally clean out our garage and get some more stuff organized! Every single project we do, even tiny things like hanging a picture, make this house feel more like home.
This morning we met up with Allison, Maddie & Abby for our weekly Monday morning 5 mile walk. Leah has been getting a little better about sitting in the stroller. As long as I have lots of snacks and toys on hand. After our walk the girls were being silly like always and chasing each other around.
I was trying to get a cute pic of them in the leaves, but this is the best I got
I hope everyone else had a great weekend!
Cute little miss getting ready to go take a bath. |
OK so this pic is a little posed, I told her to do her sad face :) but it was after she bonked her head and needed a bandaid :) |

Friday randoms
It is starting to get cold outside, brrrrrrrr! We stayed in this morning and Leah did some art projects.
Leah doesn't really love coloring yet but she is obsessed with stickers! Look at these cute ones my mom found for her!
A few weeks ago Leah pinched her hand in the door and I gave her a bandaid to make it all better. Well, ever since then she has been asking for bandaids all the time. Especially when she falls down or something, between sobs will say "bandeen! bandeen!". It is really cute.
I picked up Leah's first pair of tennis shoes yesterday! She looks like such a big girl in them!
I also picked up this last week-
YUM! I normally drink more tea than coffee but not since I got this creamer!
Also, we finally found renters for the condo!!!!!! Hooray! No more worrying about placing ads, showing it to perspective renters, or the possibility of going broke from paying 2 mortgages, ha!
Well happy weekend everyone!! :-)

A Walk to the Park
I just love sunny crisp fall days like today! We took advantage and walked to one of the many parks in our neighborhood. We love this neighborhood so much, and I think I have mentioned before that we found this neighborhood, then found a house in it!
I have been getting really caught up on chores this week which is nice. I felt really busy last week with Leah's party, the football game, Halloween, etc. But now I feel like I need to get organized and tackle some more house projects! We need to finish decorating the den and guest room, along with getting some family photos hung! Then finally I will post some pics of all the rooms of our house!
Such a pretty walk! |
In addition to playgrounds, there are lots of little parks like this with benches and/or picnic tables. |
Leah loves this playground the best because it has a tunnel :) |
On a big girl swing! |
Playing in the gravel, yuck! |
Nothing like hot coffee outside on a cool day. |
She loves pushing things around - strollers, shopping carts, laundry basket, etc. |
Tunnel! |

Halloween
We had so much fun trick-or-treating with Leah this year!!!! She got really into it and was holding her little pumpkin bag and running from house to house, knocking on the doors and saying "Trick-or-Treat" (well, sometimes saying it!).
Just cause you know I love doing this, here is Miss Hula Girl Leah last year! She was about 8 months old.
This year we were so excited to have our own great neighborhood to take Leah around in! First, both of Leah's grandmas came over to give her treats and see her in her costume! Then we headed out!
She got to eat her first candy bars too! Now she keeps asking for CANDY! Great....she never knew that word before yesterday and now I'm in trouble, haha!
